The small island nation of São Tomé and Príncipe is located off the western coast of equatorial Africa. The former Portuguese colony was prized for it's abundant sugar cane harvest and economically intertwined with the slave trade. Since its independence in 1975, it has become one of the most stable democracies in Africa. While the unique terroir of São Tomé creates cacao renowned for its luscious flavor, the island remains extremely poor.
In 2015, Satocao, a certified organic co-op with more than 400 farmers, opened its doors. Letterpress is currently the only American chocolate maker working with these rare beans, air-shipping in small quantities each harvest.

In 2014, David and Corey Menkes began making chocolate in their LA apartment before the landlord asked them to move the budding business elsewhere. They took their small-batch equipment to a shared commercial kitchen and used the additional space to begin working with beans from more origins around the world. With each batch, they work to express the unique flavors of that particular place and harvest, favoring an extended grind and aging their chocolate for at least a month before tempering and making bars
