Esmeraldas, the Ecuadoran region where the beans for this bar are grown, is not usually known for its cacao. But that is changing. The Costa Esmeraldas single estate farm, owned by the Salazar family, was formerly a cattle pasture and is now planted with carefully selected Nacional hybrids. Soon, the estate will also harvest a traditional Esmeraldas cacao varietal that was cultivated in isolation for over 100 years.

In 2014, David and Corey Menkes began making chocolate in their LA apartment before the landlord asked them to move the budding business elsewhere. They took their small-batch equipment to a shared commercial kitchen and used the additional space to begin working with beans from more origins around the world.
