Mythical, Magical Porcelana: The Most Coveted Cacao in the World

Prized for centuries, the rare Porcelana bean—one of the purest forms of Criollo cacao--is known for its delicate, balanced fruit flavors, lack of bitterness and long, long finish. Sadly, we’ve lost much of this heirloom variety to encroaching development and less challenging crops. Much of what remains is uniquely vulnerable. The ivory and pale green pods of Porcelana are particularly thin, making them attractive to insects and fungal diseases.

Their unusual white beans require deftness and finesse throughout the chocolate making process. The fact that it’s so difficult to farm and requires great care to make only adds to the mystique of chocolate’s “Holy Grail”.
