Unroasted cacao beans from Belize's Maya Mountain Cacao cooperative are aged for a month in old bourbon barrels to soak up flavor and aroma before being ground and mixed with cane and maple sugars.  The delicious result is a profoundly dark chocolate with notes of vanilla, caramel and oak.

While studying yoga in Thailand, Ryan Cheney encountered chocolate made from unroasted cacao beans. He spent a year learning low-temperature chocolate-making techniques, then teamed up with Nate Hodge to launch Raaka Chocolate. Raaka makes Vegan bean-to-bar chocolates from unroasted organic cacao. Leaving the beans unroasted (or “virgin”) helps maintain the naturally occurring antioxidants and the wild flavor notes inherent in chocolate.

Raaka buys direct from their cacao growers to ensure the communities providing their beans benefit fully from commerce.
