Trinitario beans from their Bali farm are sweetened with a natural sugar made from the juice of the coconut blossom. Coconut blossom sugar boasts of the lowest glycemic indexes of any sweetener (3 times lower than cane sugar), and lends a caramel flavor that pairs well with Fleur de Sel sea salt.
